Tonoike Brewery’s History

The current brewery was founded in 1937 by Itsugoro Tonoike, and is now in it’s 3rd generation; run by his grandson Shigeki Tonoike.

As like many sake breweries in Tochigi prefecture, the Tonoike family originates from ‘Omi merchants‘ who settled over from western Japan in the 16th century. Around when Hideyoshi Toyotomi was war worrier.

Omi merchants where known to operate their businesses outside Omi, traveling into far regions North and South of Japan. They had a strong sense of social responsibility and still today influence  modern Japan’s business industry.

For example a well know word Sanpo-Yoshi, which was used by Omi Merchants  means, “good for a seller, good for a buyer, good for world.”

After moving from the west, some merchants started brewing Sake as a means to add value to the rice they had purchased.

It is know that the Tonoike family had been brewing sake in Utsunomia as early as 1829, before Itsugoro Tonoike moved to a small village near the mountains called Mashiko.

Tonoike Sake Brewery is located in a town called Mashiko located in the South East area of Tochigi prefecture, approximately 100km (2 hours) north of Tokyo.

Mashiko is well know for it’s pottery, which was put on the map by Shoji Hamada and Englishman Bernard Leach 90years ago.

Umami rich with sweet aroma

ABV: 15-16% Polishing Ratio : 60%    SMV : 1

Green apple and cooked peach on the nose. This full-throated Junmai delight is richly flavourful, yet with firm and crisp finish. It condenses rich flavor of rice character as it shines when drunk at warm temperature.

Best with Japanese-style comfort foods like prawn tempura, chicken Yakitori. This is also great with Comté cheese and Parmesan when drunk warm.

SANRAN DAIGINJO 燦爛 大吟醸

Flagrant and crisp bite

ABV: 17-18%  Polishing Ratio : 38%  SMV : 3

A well-balanced and crisp Daiginjo, with a juicy melon and anise on the nose. With it’s clean bite and svelte mouthfeel, Sanran Daiginjo evokes a crisp Chablis. A little tingle of alcohol speaks to those who like clear boozes.

With it’s practically exploding aroma and slightly high alcohol volume, Sanran Daiginjo is great as an aperitif. This sake is clean yet with body so pairs well with rich fish such as salmon sashimi and caviar.

This super-premium Junmai Daiginjo has an elegant nose comprised of green apple, juicy melon, and honeysuckle aromas. A rice-driven sake layered with vanilla, and a wisp of the umami characteristic. So layered and yet so well balanced.

Excellent with gentle flavor that is clean with a dash of salty qualities, such as  sushi/sashimi, or salad with fruity aspect such as melon and Parma ham.
